3 cups seedless watermelon, cubed
1 tbsp soy sauce
1 tsp sesame oil
1 avocado, diced
1 cup cucumber, sliced
2 cups cooked rice (white, brown, or sushi rice)
1 tsp sesame seeds
Green onion, sliced (optional)
Instructions
Toss watermelon cubes with soy sauce and sesame oil. Let sit for 10–15 minutes to absorb flavor.
Divide cooked rice into bowls.
Top each bowl with watermelon, avocado, cucumber, and a sprinkle of sesame seeds and green onion.
Serve immediately, chilled or room temp.
