Ube Cake

- 2 cups flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, at room temperature
- 2 cups sugar
- 4 large eggs, at room temperature
- 2 tsp ube extract
- 1 cup milk
- 1/2 cup grated ube (purple yam)
- Purple food coloring (optional)
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a bowl, sift together flour, baking powder, and salt. Set aside.
- In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
- Mix in the ube extract.
- Gradually add the flour mixture to the creamed mixture alternately with milk, beginning and ending with the flour mixture. Stir in the grated ube and a few drops of purple food coloring if a deeper purple hue is desired.
- Pour the batter into the prepared pans and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
