Ube cake recipe

Ingredients

  • 2 cups flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, at room temperature
  • 2 cups sugar
  • 4 large eggs, at room temperature
  • 2 tsp ube extract
  • 1 cup milk
  • 1/2 cup grated ube (purple yam)
  • Purple food coloring (optional)

 

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, sift together flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
  4. Mix in the ube extract.
  5. Gradually add the flour mixture to the creamed mixture alternately with milk, beginning and ending with the flour mixture. Stir in the grated ube and a few drops of purple food coloring if a deeper purple hue is desired.
  6. Pour the batter into the prepared pans and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
