Ingredients

  • 100g (½ cup) active sourdough starter
  • 500g (4 cups) all-purpose flour
  • 100g (¾ cup) whole wheat flour
  • 350g (1½ cups) water
  • 10g (2 tsp) salt
  • 30g (2 tbsp) olive oil

Instructions

1️⃣ Make the Dough:

  • Mix all ingredients in a stand mixer with a dough hook until combined.
  • Knead until smooth and elastic, passing the windowpane test. Add flour if too sticky.
  • Let the dough bulk ferment in an oiled bowl for 8 hours until doubled in size.
  • Divide into 4 equal portions, shape into balls, and lightly flour the tops.

2️⃣ Bag & Freeze:

  • Place each dough ball in a resealable plastic bag, removing air before sealing.
  • Store all bags in a labeled freezer-safe bag and freeze for up to a year.

3️⃣ Thaw & Bake:

  • Thaw in the fridge 10-12 hours before use.
  • Preheat oven to 500°F with a baking stone or cast iron skillet inside.
  • Shape the dough, add toppings, and bake for 10-15 minutes until golden and bubbly.
