- 100g (½ cup) active sourdough starter
- 500g (4 cups) all-purpose flour
- 100g (¾ cup) whole wheat flour
- 350g (1½ cups) water
- 10g (2 tsp) salt
- 30g (2 tbsp) olive oil
Instructions
1️⃣ Make the Dough:
- Mix all ingredients in a stand mixer with a dough hook until combined.
- Knead until smooth and elastic, passing the windowpane test. Add flour if too sticky.
- Let the dough bulk ferment in an oiled bowl for 8 hours until doubled in size.
- Divide into 4 equal portions, shape into balls, and lightly flour the tops.
2️⃣ Bag & Freeze:
- Place each dough ball in a resealable plastic bag, removing air before sealing.
- Store all bags in a labeled freezer-safe bag and freeze for up to a year.
3️⃣ Thaw & Bake:
- Thaw in the fridge 10-12 hours before use.
- Preheat oven to 500°F with a baking stone or cast iron skillet inside.
- Shape the dough, add toppings, and bake for 10-15 minutes until golden and bubbly.
