Ingredients
✔️ 2 tbsp unsalted butter
✔️ 1 small onion, chopped
✔️ 2 cloves garlic, minced
✔️ 3 medium potatoes, peeled & diced
✔️ 4 cups chicken or vegetable broth
✔️ 2 cups fresh broccoli florets
✔️ ½ cup heavy cream
✔️ 1½ cups shredded sharp cheddar cheese
✔️ ½ tsp salt (adjust to taste)
✔️ ¼ tsp black pepper
✔️ ½ tsp dried thyme (optional)
✔️ Fresh parsley for garnish
Instructions
1️⃣ Melt butter in a large pot over medium heat. Sauté onions for 4-5 minutes, then add garlic and cook for 1-2 minutes.
2️⃣ Add potatoes and broth, bring to a boil, then simmer for 10-15 minutes until potatoes are tender.
3️⃣ Blanch broccoli in boiling water for 3-4 minutes, then drain and set aside.
4️⃣ Blend the soup until smooth using an immersion blender.
5️⃣ Stir in heavy cream, cheese, salt, pepper, and thyme. Mix until creamy.
6️⃣ Add the broccoli, simmer for 3-5 minutes, then adjust seasoning as needed.
7️⃣ Serve warm, garnished with fresh parsley.
