Ingredients
✔ 2 cups cooked shredded chicken
✔ 2 cans (15 oz each) white beans, drained & rinsed
✔ 1 can (4 oz) green chilies
✔ 4 cups chicken broth
✔ 1 cup frozen corn (optional)
✔ 1 medium onion, diced
✔ 2 cloves garlic, minced
✔ 1 tsp ground cumin
✔ 1 tsp chili powder
✔ ½ tsp smoked paprika
✔ 4 oz cream cheese, softened
✔ ½ cup heavy cream
✔ Salt & pepper to taste
Instructions
1️⃣ In a large pot, sauté onion & garlic until soft.
2️⃣ Add green chilies, cumin, chili powder, smoked paprika, salt, & pepper. Stir well.
3️⃣ Pour in chicken broth & bring to a simmer.
4️⃣ Add shredded chicken, white beans, & corn (if using). Simmer for 15-20 minutes.
5️⃣ Stir in cream cheese until melted, then add heavy cream & mix until smooth.
6️⃣ Serve hot with shredded cheese, chopped cilantro, and a squeeze of lime juice!
Notes
- Mash some of the beans for a thicker texture.
- Spice it up with jalapeños or cayenne pepper!
