Ingredients

1 lb ground breakfast sausage
6 large eggs
2 cups shredded cheddar cheese
1/2 cup chopped onions
1/2 cup chopped bell peppers (optional)
2 1/2 cups frozen diced hash browns (thawed)
1 cup milk
Salt & pepper to taste
Chopped parsley for garnish
Instructions
Preheat oven to 350°F (175°C).
In a skillet, cook sausage until browned. Drain excess grease.
In a large bowl, whisk eggs and milk. Add salt, pepper, onions, peppers, and hash browns. Mix well.
Stir in the cooked sausage and 1 ½ cups of cheese.
Pour mixture into a greased 9×13 inch baking dish.
Top with remaining cheese.
Bake for 45–50 minutes or until set and golden.
Let cool 5 minutes, garnish with parsley, and serve warm!
