Ingredients

🥩 1 lb ground beef
🧅 1 onion, chopped
🧄 2 cloves garlic, minced
🌭 14 oz skinless smoked sausage, sliced
🥓 4 slices cooked bacon, crumbled
🥔 3 medium potatoes, peeled & diced
🫘 1 can (15 oz) kidney beans, drained & rinsed
🖤 1 can (15 oz) black beans, drained & rinsed
🌽 1 can (15 oz) corn, drained
🍅 1 can (15 oz) diced tomatoes (with juice)
🥣 2 ½ cups beef broth
🌶️ 2 tsp chili powder
🌿 1 tsp cumin
🔥 ½ tsp smoked paprika
🧂 ½ tsp salt
⚫ ¼ tsp black pepper
🧀 1 cup shredded cheddar cheese (optional)


Instructions

1️⃣ In a large pot or Dutch oven, cook the ground beef, onion, and garlic over medium heat until browned. Drain any excess fat.

2️⃣ Add the smoked sausage and crumbled bacon, stir, and cook for a few minutes.

3️⃣ Stir in the potatoes, kidney beans, black beans, corn, and diced tomatoes (with juice).

4️⃣ Pour in the beef broth and add the chili powder, cumin, smoked paprika, salt, and pepper. Stir well.

5️⃣ Bring to a simmer, reduce heat to low, cover, and let cook for 20-25 minutes until potatoes are tender.

6️⃣ Optional: Stir in cheddar cheese before serving for extra richness.
