Description

This savory teriyaki beef and broccoli is quick, easy, and packed with flavor! The tender beef, charred broccoli, and rich teriyaki sauce come together perfectly, served over rice with a creamy, spicy yum yum sauce. A perfect 30-minute meal for busy weeknights! 😍


Ingredients

For the Stir-Fry:

🥦 12 oz broccoli florets
🛢️ 2 tbsp olive oil, divided
🥩 1 lb ground beef (or ground turkey/chicken)
🧄 2 cloves garlic, minced (optional)
🫚 1” piece ginger, minced (optional)
🥢 1 cup teriyaki sauce

For the Yum Yum Sauce:

🥣 ¼ cup (60g) light mayo
🌶️ 1 ½ tbsp (23g) Sriracha or chili garlic sauce
🍯 1 tbsp (21g) honey
🍚 1 tbsp (15g) rice vinegar
🧄 ½ tsp garlic powder

For Serving:

🍚 Rice or cauliflower rice
🌿 Toasted sesame seeds & sliced scallions (for garnish)


Instructions

1️⃣ Make the Yum Yum Sauce

  • In a small bowl, whisk together all the sauce ingredients until smooth.
  • Set aside while you prepare the stir-fry.

2️⃣ Cook the Broccoli

  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  • Add broccoli and let it sear without touching for 2-3 minutes until slightly charred.
  • Flip and cook for another 2-3 minutes.
  • Transfer to a bowl and set aside.

3️⃣ Cook the Ground Beef

  • In the same skillet, heat ½ tbsp olive oil and add ground beef.
  • Let it brown on one side before breaking it apart.
  • Cook until fully browned.

4️⃣ Add Flavor

  • Create a small center well in the pan and add the remaining ½ tbsp oil, then stir in garlic & ginger.
  • Cook for 30-60 seconds until fragrant, then mix with the beef.

5️⃣ Add Teriyaki & Broccoli

  • Pour in the teriyaki sauce, stir everything together, and cook for 1-2 minutes until the sauce thickens.
  • Add the broccoli back to the pan, stir to coat, and turn off the heat.

6️⃣ Serve & Enjoy!

  • Serve over steamed rice or cauliflower rice.
  • Drizzle with yum yum sauce and sprinkle with toasted sesame seeds & scallions.

Notes
