1 lb ground beef

1 (16 oz) bag frozen corn w/ peppers

1 (12 oz) can black beans, rinsed

1 small onion, diced

1 garlic clove, minced

1 packet taco seasoning (1 oz)

1 (12 oz) bag shredded Mexican cheese blend

1 (16 oz) bag frozen tater tots

1 (12 oz) can enchilada sauce
Instructions

Preheat oven to 375°F. Spray a 9×13″ baking dish.

Brown beef in skillet (5–7 mins). Stir in corn, beans, onion, garlic, and taco seasoning. Cook 10 mins.

In a large bowl, mix beef mixture with ¾ of cheese and tater tots.

Pour ⅓ of enchilada sauce into the dish. Add the tater tot mix, press down, then pour remaining sauce over top.

Bake 40 mins. Sprinkle with remaining cheese and bake 5 mins more until melted and bubbly.
