1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
3 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
1 cup buttermilk
1/4 cup fresh key lime juice
1 tbsp key lime zest
1 tsp vanilla extract
Glaze:
1 cup powdered sugar
2 tbsp key lime juice
1 tsp zest (for garnish)
Instructions
Preheat oven to 325°F (165°C). Grease and flour a bundt or loaf pan.
Cream butter and sugar until light and fluffy. Add eggs one at a time.
Mix dry ingredients in a separate bowl.
Add flour mixture to the butter mixture alternately with buttermilk.
Stir in lime juice, zest, and vanilla.
Pour into pan and bake 60–70 minutes. Cool before glazing.
Mix glaze ingredients and drizzle over cooled cake.
