Sweeten Your Valentine’s Day with Strawberry Brownies!
For the brownies:
- 1 box strawberry cake mix (we used Pillsbury)
- 2 large eggs
- ⅓ cup vegetable or canola oil
- 1 teaspoon vanilla extract
For the glaze:
- ¾ cup powdered sugar
- 2 tablespoons strawberry preserves (Bonne Maman is our favorite!)
- 1 ½ tablespoons milk
- 1 tablespoon cream cheese (optional)
- Preheat your oven to 350°F. Spray an 8×8 pan with nonstick spray or line it with foil or parchment paper.
- In a large bowl, mix the strawberry cake mix, eggs, oil, and vanilla extract until combined. Press the batter into the prepared pan.
- Bake for 18-22 minutes, until just done. Let cool completely before adding the glaze.
- For the frosting, whisk powdered sugar, strawberry jam, milk, and cream cheese (if using) until smooth. Spread over the cooled brownies.
- Slice into squares, serve, and enjoy!
Tips for Storage:
- Store in a single layer in an airtight container to keep the glaze from sticking.
- If frosted, refrigerate due to the milk and jam. Without frosting, they can stay at room temperature.
