Sweeten Your Valentine’s Day with Strawberry Brownies!

Preheat your oven to 350°F. Spray an 8x8 pan with nonstick spray or line it with foil or parchment paper. In a large bowl, mix the strawberry cake mix, eggs, oil, and vanilla extract until combined. Press the batter into the prepared pan. Bake for 18-22 minutes, until just done. Let cool completely before adding the glaze. For the frosting, whisk powdered sugar, strawberry jam, milk, and cream cheese (if using) until smooth. Spread over the cooled brownies. Slice into squares, serve, and enjoy! Tips for Storage: Store in a single layer in an airtight container to keep the glaze from sticking. If frosted, refrigerate due to the milk and jam. Without frosting, they can stay at room temperature.

  • 1 box strawberry cake mix (we used Pillsbury)
  • 2 large eggs
  • ⅓ cup vegetable or canola oil
  • 1 teaspoon vanilla extract

  • ¾ cup powdered sugar
  • 2 tablespoons strawberry preserves (Bonne Maman is our favorite!)
  • 1 ½ tablespoons milk
  • 1 tablespoon cream cheese (optional)
