- 2 ½ lbs boneless, skinless chicken breasts
- Salt and pepper
- 1 cup cornstarch
- 3 eggs, lightly beaten
- ¼ cup vegetable oil
- 1 cup sugar
- 6 tbsp ketchup
- ¾ cup apple cider vinegar
- 1 ½ tbsp soy sauce
- 1 ½ tsp garlic powder
Instructions
1️⃣ Cut chicken into bite-sized chunks and season with salt and pepper.
2️⃣ Preheat oven to 325ºF.
3️⃣ Coat chicken in cornstarch, dip in eggs, then brown in hot oil.
4️⃣ Transfer browned chicken to a 9×13-inch baking dish.
5️⃣ Mix sugar, ketchup, vinegar, soy sauce, and garlic powder. Pour over chicken.
6️⃣ Bake for 1 hour, stirring every 15 minutes.
