Strawberry Shortcake Cheesecake Rolls: A Decadent Dessert Delight

1️⃣ 8 oz cream cheese, softened
2️⃣ 1/4 cup granulated sugar
3️⃣ 1 tsp vanilla extract
4️⃣ 1 cup heavy whipping cream
5️⃣ 1 cup fresh strawberries, diced
6️⃣ 2 tbsp granulated sugar (for macerating strawberries)
7️⃣ 1 1/2 cups crushed shortbread cookies or graham crackers
8️⃣ 1/4 cup unsalted butter, melted
9️⃣ 6 large crepes or thin cake layers
🔟 Powdered sugar for dusting

Instructions

1️⃣ Beat cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
2️⃣ Whip the heavy cream to stiff peaks and gently fold into the cream cheese mixture.
3️⃣ In a small bowl, mix diced strawberries with 2 tbsp granulated sugar. Let sit for 10 minutes to macerate.
4️⃣ Combine crushed cookies with melted butter until the mixture resembles wet sand.
5️⃣ Take one crepe or thin cake layer and spread the cream cheese filling evenly over it. Sprinkle some cookie crumbs and macerated strawberries on top.
6️⃣ Roll the crepe tightly into a sushi-like shape. Repeat with the remaining crepes and filling.
7️⃣ Wrap the rolls in plastic wrap and refrigerate for at least 1 hour.
8️⃣ Slice into 1-inch pieces, dust with powdered sugar, and serve!

 

Notes

  • Make sure the rolls are thoroughly chilled before slicing for clean cuts.
  • Both shortbread cookies and graham crackers work perfectly—choose your favorite!
