There’s something so special about waking up to the smell of pancakes sizzling on the griddle. These strawberry pancakes remind me of slow weekend mornings, where every bite is bursting with juicy berries and fluffy goodness. Whether it’s a cozy breakfast in bed or a treat for the whole family, these pancakes are a guaranteed hit!

- 1 tbsp vinegar
- 1 ¾ cups milk
- 2 cups all-purpose flour
- ¼ cup sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 large eggs
- 2 tsp vanilla extract
- ¼ cup unsalted butter, melted
- 1 ½ cups chopped strawberries*
Instructions
1. Prep the Buttermilk
- Mix vinegar and milk in a measuring cup; set aside.
2. Mix Dry Ingredients
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
3. Combine Wet Ingredients
- In another bowl, whisk eggs, vanilla, melted butter, and the milk mixture.
4. Make the Batter
- Gently mix wet ingredients into dry ingredients until just combined. Fold in strawberries.
5. Cook the Pancakes
- Heat a griddle to 350°F (or a frying pan on medium). Lightly grease with oil or spray.
- Pour ¼ cup of batter per pancake. Cook for 2-3 minutes, until air bubbles form, then flip.
- Cook until golden brown, then repeat with the remaining batter.
Notes
Using frozen berries? Toss them in 2 tsp flour first (don’t thaw!) to prevent soggy pancakes.
