Ingredients
For the Cookie Dough:
✔ 1 cup (215g) butter, softened
✔ ¼ cup (55g) packed brown sugar (light or dark)
✔ 1 cup (190g) white granulated sugar
✔ 1 large egg (60g)
✔ 2 tsp vanilla extract
✔ ½ tsp strawberry extract (adjust to taste)
✔ 1 tsp red/pink food coloring (optional)
✔ 2 ½ cups (310g) all-purpose flour
✔ 1 tsp baking soda (6g)
✔ ½ tsp baking powder (2g)
✔ ¼ tsp salt (if using unsalted butter)
For the Cream Cheese Filling:
✔ 1 cup (8oz/226g) cream cheese, softened
✔ ⅔ cup (60g) powdered sugar
✔ 1 tsp vanilla extract
For the Sugar Coating:
✔ 1 cup (200g) white granulated sugar
Instructions
1️⃣ Make the Cream Cheese Filling
📌 In a bowl, whisk cream cheese, powdered sugar, and vanilla until smooth.
📌 Scoop 1 tbsp-sized balls onto a parchment-lined tray (should make about 12).
📌 Freeze for 30-60 minutes until firm.
2️⃣ Make the Cookie Dough
📌 Preheat oven to 350°F (175°C).
📌 Beat butter for 3-5 minutes until pale and fluffy.
📌 Add brown sugar & white sugar, then beat for 2 minutes until creamy.
📌 Mix in egg, vanilla, strawberry extract, and food coloring (if using).
📌 Fold in flour, baking soda, baking powder, and salt until dough forms.
📌 If dough is sticky, add 2-3 tbsp flour at a time until it’s soft but not sticky.
3️⃣ Assemble the Cookies
📌 Scoop 1/3 cup (80g) dough for each cookie.
📌 Flatten dough, place 1 frozen cream cheese ball in the center, then wrap dough around it.
📌 Roll each dough ball in granulated sugar.
4️⃣ Bake the Cookies
📌 Place on a lined baking sheet and bake for 10-11 minutes.
📌 For perfectly round cookies, swirl a cup/bowl around them right after baking.
📌 Let them sit for 10 minutes before transferring to a wire rack.
