Ingredients

For the Cake:
✅ 12 oz (2 ¼ cups) dried dates, chopped
✅ 2 ¼ cups boiling water
✅ 1 ½ tsp baking soda
✅ 8 tbsp (1 stick) unsalted butter, melted
✅ ¾ cup granulated sugar
✅ 2 tbsp light brown sugar
✅ 2 large eggs
✅ ¼ tsp salt
✅ 1 ⅔ cups all-purpose flour

For the Toffee Sauce:
✅ 8 tbsp (1 stick) unsalted butter, melted
✅ 1 cup heavy cream
✅ 1 cup + 2 tbsp brown sugar
✅ 2 tsp vanilla extract


Instructions

1️⃣ In a heatproof bowl, pour boiling water over the chopped dates and stir in baking soda. Cover and let sit for 30 minutes.
2️⃣ Preheat oven to 350°F. Butter a 9×13 baking pan.
3️⃣ Blend the softened date mixture until smooth.
4️⃣ In a large bowl, mix melted butter, sugars, eggs, and salt. Stir in flour, then fold in the date puree.
5️⃣ Pour batter into the pan and bake for 25-30 minutes (until a toothpick comes out clean).
6️⃣ Meanwhile, make the toffee sauce: In a saucepan, combine butter, cream, sugar, and vanilla. Simmer and whisk for 10 minutes until thickened.
7️⃣ Cut out a slice, drizzle with warm toffee sauce, and enjoy! (Top with whipped cream if you like!) 😍
