Ingredients
- 2 tbsp extra-virgin olive oil
- 6 garlic cloves, minced
- 1 lb Cremini mushrooms, cleaned & sliced
- 2 ¼ cups half-and-half (or single cream)
- 1 lb pasta (any type you love)
- 8 oz fresh spinach
- 1 cup freshly grated Parmesan cheese
- 2 tbsp flat-leaf parsley, chopped
- Salt & pepper to taste
Instructions
1️⃣ Boil the pasta – Bring a large pot of salted water to a boil. Cook pasta until just under al dente. Reserve ½ cup of pasta water before draining.
2️⃣ Sauté the garlic & mushrooms – Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant (about 1 minute). Stir in mushrooms, season with salt & pepper, and cook until golden and tender (about 8 minutes).
3️⃣ Add the spinach & sauce – Toss in spinach and let it wilt. Pour in the half-and-half, bring to a gentle boil, then reduce heat and simmer for 4 minutes.
4️⃣ Combine everything – Add the drained pasta, parsley, and Parmesan cheese. Gradually mix in reserved pasta water to achieve a creamy consistency.
5️⃣ Taste & serve – Adjust seasoning if needed, then serve immediately with a fresh salad and crusty bread for a complete meal.
