Ingredients
🔸 2 cups cooked chicken (shredded or chopped)
🔸 1 cup corn (drained & rinsed)
🔸 1 cup black beans (drained & rinsed)
🔸 1 cup chopped spinach
🔸 1 cup diced red bell pepper
🔸 ¼ cup diced jalapeño (de-seeded)
🔸 ½ tbsp cumin
🔸 ½ tbsp chili powder
🔸 1 tsp salt
🔸 ¼ tsp black pepper
🔸 2 cups Monterey Jack cheese
🔸 1 package (20) egg roll wrappers
Instructions
1️⃣ In a large bowl, mix chicken, corn, black beans, spinach, red pepper, and jalapeño.
2️⃣ Stir in cumin, chili powder, salt, and pepper. Add cheese and mix well.
3️⃣ Lay out an egg roll wrapper, add 2-3 tbsp of filling, and roll tightly. Seal the edges with water.
4️⃣ Repeat with remaining wrappers and filling.
For Frying:
👉 Heat 1 inch of oil in a pan to 350°F. Fry egg rolls for 2-3 minutes per side until golden.
For Baking:
👉 Preheat oven to 425°F. Brush egg rolls with oil and bake for 15-20 minutes, flipping halfway through
