Ingredients
✔ 1 ½ lbs beef stew meat, cut into bite-sized pieces
✔ 1 lb baby potatoes, halved
✔ 4 tbsp unsalted butter, melted
✔ 3 cloves garlic, minced
✔ 1 tsp onion powder
✔ 1 tsp smoked paprika
✔ ½ tsp dried thyme
✔ ½ tsp dried rosemary
✔ ½ tsp salt (or to taste)
✔ ¼ tsp black pepper
✔ ¼ cup beef broth
✔ 1 tbsp olive oil
Instructions
1️⃣ Heat olive oil in a skillet over medium-high heat. Sear the beef bites until browned on all sides (about 2-3 min per side). Transfer to the slow cooker.
2️⃣ Add baby potatoes to the slow cooker.
3️⃣ In a small bowl, mix melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Pour over the beef and potatoes.
4️⃣ Add beef broth, cover, and cook on LOW for 6-8 hours (or HIGH for 3-4 hours) until beef is tender and potatoes are soft.
5️⃣ Serve warm, garnished with fresh parsley if desired.
