Creamy Shrimp Orzo – A 30-Minute One-Pan Wonder!

For the Shrimp:

  • 1 lb large shrimp (1620 count, peeled & deveined)
  • 1 tsp smoked paprika
  • ½ tsp Italian seasoning (thyme, basil, oregano, rosemary)
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 5 cloves garlic, minced
  • 2 tbsp olive oil

For the Orzo & Sauce:

  • ⅓ cup sun-dried tomatoes, chopped
  • 1 cup uncooked orzo
  • 2 cups chicken stock
  • ¼ tsp salt
  • 1 can (14 oz) artichoke hearts, drained & chopped
  • 4 oz fresh spinach
  • 1 cup heavy cream
  • Additional salt, pepper & smoked paprika (to taste)

Instructions

1️⃣ Sear the Shrimp – Toss shrimp with paprika, Italian seasoning, salt, and pepper. Heat 2 tbsp olive oil in a skillet over medium-high heat. Add shrimp and minced garlic, cooking for 2 minutes per side until golden. Remove and set aside.

2️⃣ Toast the Orzo – In the same skillet, add sun-dried tomatoes, orzo, and 1 tbsp olive oil. Stir and cook for 2 minutes until lightly browned.

3️⃣ Simmer the Orzo – Pour in chicken stock and salt. Bring to a boil, then reduce heat and simmer for 5–10 minutes, stirring occasionally until orzo is tender.

4️⃣ Make It Creamy – Stir in artichokes, spinach, and heavy cream. Cook until spinach wilts and everything is creamy.

5️⃣ Bring It Together – Return the shrimp to the skillet, simmer for 2 minutes until warmed through. Season with more salt, pepper, and smoked paprika if needed.
