With ground beef, potatoes, and frozen veggies, I created a simple Shepherd’s Pie—and it’s been a family favorite ever since! This dish is rich, filling, and perfect for a cozy night in. Ingredients
✅ 1 lb ground beef (85% lean)
✅ 1 small onion, diced
✅ 2 cloves garlic, minced
✅ 1 cup frozen mixed vegetables (peas, carrots, corn)
✅ 1 tbsp tomato paste
✅ 1 tsp Worcestershire sauce
✅ ½ cup beef broth
✅ 1 tsp salt
✅ ½ tsp black pepper
For the mashed potatoes:
✅ 2 lbs potatoes (Yukon Gold or Russet), peeled & diced
✅ 3 tbsp butter
✅ ½ cup milk
✅ ½ tsp salt
✅ ¼ tsp black pepper
Instructions
1️⃣ Boil potatoes in salted water until fork-tender (15 mins). Drain and mash with butter, milk, salt, and pepper. Set aside.
2️⃣ In a skillet over medium heat, cook ground beef until browned (5–7 mins). Drain if needed.
3️⃣ Add onion and garlic, cooking until softened (3–4 mins). Stir in tomato paste, Worcestershire sauce, beef broth, and frozen vegetables. Simmer for 5 mins.
4️⃣ Preheat oven to 375°F (190°C).
5️⃣ Spread beef mixture evenly in a baking dish. Top with mashed potatoes, spreading evenly.
6️⃣ Bake uncovered for 20 mins or until slightly golden.
7️⃣ Let cool slightly and enjoy!
