The first time I made this, I knew it was something special—crispy, juicy salmon topped with a creamy avocado salsa that’s spicy, tangy, and salty from the feta. It’s the perfect mix of bold and refreshing, ready in no time and perfect for a light dinner or impressive lunch!
Ingredients
2 salmon filets (about 1 lb total)
1 ripe avocado, cubed
2 oz feta cheese, crumbled
½ jalapeño, finely chopped (keep seeds for heat or remove for milder taste)
¼ cup chopped fresh cilantro
¼ tsp cumin
Juice of ½ lime
Pinch of salt
Instructions
Season and sear or bake salmon until cooked to your liking.
In a bowl, gently mix avocado, feta, jalapeño, cilantro, cumin, lime juice, and salt.
Spoon salsa over cooked salmon and serve immediately.
