Whip up these flavor-packed tacos in under 30 minutes using tender rotisserie chicken and your favorite toppings. Perfect for busy weeknights or taco nights!
Ingredients
✔️ 1 tbsp olive oil
✔️ ½ cup yellow onion, diced
✔️ 3 cups rotisserie chicken, shredded
✔️ 1 tsp ground cumin
✔️ 1 tsp paprika
✔️ ½ tsp ground coriander
✔️ ½ tsp oregano
✔️ ½ tsp kosher salt (or to taste)
✔️ ½ tsp black pepper (or to taste)
✔️ 2 tbsp tomato paste
✔️ ½ cup low-sodium chicken broth
✔️ 1 lime (for squeezing)
✔️ 1 (14 oz) can black beans, drained & warmed
✔️ 12 small tortillas (corn for gluten-free)
Instructions
1️⃣ Sauté the Onion
- Heat olive oil in a large skillet over medium heat.
- Add onion and sauté for 3 minutes until tender.
2️⃣ Season & Cook the Chicken
- Stir in shredded chicken and sprinkle with cumin, paprika, coriander, oregano, salt, and pepper.
- Cook for 1-2 minutes to coat the chicken in the spices.
3️⃣ Simmer in Sauce
- Add tomato paste and chicken broth, stirring to combine.
- Bring to a simmer, then reduce heat to low and cook for 4-5 minutes, until most of the liquid is absorbed.
4️⃣ Toast the Tortillas (optional but recommended!)
- Heat a dry skillet over medium heat.
- Toast each tortilla for 30 seconds per side until warm and lightly golden.
5️⃣ Assemble Your Tacos
- Fill tortillas with chicken, black beans, and your favorite toppings.
- Squeeze fresh lime juice over the top for extra flavor.
