Ingredients
🍝 1 lb penne pasta
🛢️ 1 tbsp olive oil
🥩 1 lb lean ground beef
🧅 1 yellow onion, diced
🧄 4 cloves garlic, minced
🍅 1 can (10 oz) Rotel diced tomatoes with green chilies (undrained)
🥣 1 cup beef broth
🥛 ½ cup heavy cream
🧀 4 oz cream cheese, cubed & softened
🥄 1 tbsp Worcestershire sauce
🌶️ 1 tsp chili powder
🌿 1 tsp smoked paprika
🧂 1 tsp garlic salt
🌾 ½ tsp ground cumin
⚫ ½ tsp black pepper
🧀 1 cup shredded cheddar cheese
🌿 Fresh cilantro or parsley for garnish
Instructions
1️⃣ Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook penne pasta according to package directions until al dente.
- Drain and set aside.
2️⃣ Cook the Beef & Onions
- In a large skillet, heat olive oil over medium-high heat.
- Add ground beef & diced onion and cook until beef is browned and onions are soft (5-7 minutes).
- Stir in minced garlic and cook for 1 minute.
3️⃣ Make the Creamy Rotel Sauce
- Add Rotel tomatoes, beef broth, heavy cream, cream cheese, Worcestershire sauce, chili powder, smoked paprika, garlic salt, cumin, and black pepper.
- Stir and bring to a simmer.
- Cook for 5 minutes, until the cream cheese melts and the sauce thickens slightly.
4️⃣ Melt the Cheese
- Reduce heat to low and stir in shredded cheddar cheese.
- Mix until smooth and creamy.
5️⃣ Toss with Pasta & Serve
- Add cooked penne to the skillet and toss until evenly coated.
- Garnish with fresh cilantro or parsley.
