Ingredients

5 large carrots, peeled into ribbons

3 cloves garlic, finely minced

2 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon sesame oil

Juice of 1 lime

1 teaspoon granulated sugar (optional)

1 tablespoon sesame seeds, toasted

2 scallions, thinly sliced


Instructions

  • In a large mixing bowl, whisk together the soy sauce, rice vinegar, sesame oil, lime juice, and sugar until smooth.

  • Add in the carrot ribbons and minced garlic. Toss gently until the carrots are fully coated in the dressing.

  • Sprinkle in the toasted sesame seeds and sliced scallions. Mix again to combine.

  • Let the salad sit for at least 20 minutes (or longer in the fridge) to allow flavors to deepen.

  • Serve chilled or at room temperature, and enjoy your glow from within!

    Optional Additions

    • 🔥 Add a kick with red pepper flakes or chopped serrano pepper

    • 🥒 Toss in thinly sliced cucumbers for extra crunch

    • 🥜 Top with crushed peanuts for protein and texture
