Ingredients
5 large carrots, peeled into ribbons
3 cloves garlic, finely minced
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon sesame oil
Juice of 1 lime
1 teaspoon granulated sugar (optional)
1 tablespoon sesame seeds, toasted
2 scallions, thinly sliced
Instructions

In a large mixing bowl, whisk together the soy sauce, rice vinegar, sesame oil, lime juice, and sugar until smooth.

Add in the carrot ribbons and minced garlic. Toss gently until the carrots are fully coated in the dressing.

Sprinkle in the toasted sesame seeds and sliced scallions. Mix again to combine.

Let the salad sit for at least 20 minutes (or longer in the fridge) to allow flavors to deepen.
