The buttery, garlicky aroma mixed with tender chicken and perfectly seasoned rice is pure comfort food. The best part? You can make this at home in under an hour! Skip the takeout and try this easy, flavor-packed fried rice that tastes just like it came off the hibachi grill.
Ingredients
- 1 ½ tsp sesame oil
- 4 tsp neutral oil (avocado or canola), divided
- ¾ lb chicken breast, diced small
- 5 tbsp low-sodium soy sauce, divided
- 4 tbsp butter, divided
- 2 tsp fresh lemon juice
- Salt & pepper, to taste
- ½ cup diced white onion
- 1 cup frozen mixed vegetables (peas & carrots)
- 2 large eggs
- 4 cups cooked rice (cool to touch, leftover rice works best)
- Sesame seeds (optional, for garnish)
Instructions
1. Cook the Chicken
- Heat 1 ½ tsp sesame oil + 1 tbsp neutral oil in a large skillet over medium-high heat.
- Add diced chicken and cook for 1 minute without stirring.
- Add 2 tbsp soy sauce, 1 tbsp butter, 2 tsp lemon juice, salt, and pepper. Cook 1-3 minutes until no longer pink.
- Transfer chicken to a bowl and wipe out the skillet.
2. Make the Fried Rice
- Heat 1 tsp neutral oil in the same skillet. Add onions and frozen veggies, sauté for 3 minutes.
- Push veggies to one side, crack in eggs, and scramble until fully cooked.
- Add 4 cups rice and 3 tbsp butter. Stir frequently and cook for 5 minutes.
- Stir in 3 tbsp soy sauce and cook 1 more minute.
- Add the chicken back in, season with salt and pepper, and stir until well combined.
Notes
Portion into bowls, garnish with sesame seeds, and serve warm. This dish is perfect on its own or as a side to your favorite Asian-inspired meal!
Leftover rice is the secret to the best fried rice! Fresh rice will be too soft and sticky.
