Cookies:

  • 1 box red velvet cake mix
  • 2 large eggs
  • ⅓ cup butter, melted and cooled slightly
  • 2 teaspoons vanilla extract
  • ½ cup powdered sugar

Cream Cheese Frosting:

  • 4 oz cream cheese, softened
  • 4 tbsp unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Instructions

1️⃣ Preheat oven to 375°F and line baking sheets with parchment paper.
2️⃣ In a large bowl, mix cake mix, eggs, butter, and vanilla with an electric hand mixer until well combined.
3️⃣ Place powdered sugar in a separate bowl. Scoop 1 tbsp of dough, roll in powdered sugar, and place on the baking sheet 3 inches apart.
4️⃣ Bake for 7-9 minutes until cookies crack slightly on top and appear set. Let cool for 10 minutes on the tray, then transfer to a wire rack.
5️⃣ To make frosting: Beat cream cheese and butter until smooth. Gradually add vanilla and powdered sugar, then whip for 2 minutes.
6️⃣ Spread 2 tsp of frosting on the bottom of one cookie, top with another, and gently press to create a sandwich.
