Ingredients

✅ 1 large sweet potato, peeled & cubed
✅ 2 ½ tbsp olive oil (divided)
✅ 1 lb (454g) boneless, skinless chicken breasts, cut into bite-sized pieces
✅ 2 onions (1 red, 1 white), peeled & sliced
✅ 1 bell pepper, diced
✅ 14 grape tomatoes
✅ 1 oz (28g) ranch seasoning (1 packet)
✅ 2 tsp dried oregano or Italian seasoning
✅ 1 tsp smoked paprika
✅ Garlic salt (to taste)


Instructions

1️⃣ Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
2️⃣ Place sweet potatoes in the center of the pan, drizzle with 1 tbsp oil, mix, and bake for 15 minutes.
3️⃣ In a large bowl, toss chicken, peppers, onions, tomatoes, remaining oil, ranch seasoning, paprika, Italian seasoning, and garlic salt.
4️⃣ Spread the chicken mixture around the sweet potatoes on the sheet pan.
5️⃣ Return to the oven and bake for 15-18 minutes until the chicken reaches 165°F (74°C).
6️⃣ Serve hot and enjoy this easy, delicious meal!
