  • 1 tsp vanilla extract
  • 2 cups powdered sugar
  • 3 Tbsp milk (adjust for consistency)

For the Pancakes:

  • 1½ cups all-purpose flour
  • 2 Tbsp sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 large egg
  • 1 cup milk
  • 2 Tbsp vegetable oil (or melted butter)
  • 23 drops pink gel food coloring
  • Optional: 1 tsp strawberry extract or 3-4 Tbsp strawberry purée
  • Sprinkles (about ⅓ cup, optional)

Instructions

Step 1: Make the Icing
1️⃣ In a medium bowl, beat softened butter and cream cheese until smooth.
2️⃣ Add vanilla and powdered sugar, beating until combined.
3️⃣ Stir in milk, 1 Tbsp at a time, until icing reaches a thick syrup-like consistency. Set aside.

Step 2: Make the Pancake Batter
1️⃣ In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
2️⃣ Create a well in the center of the dry ingredients. Add egg, milk, oil, and food coloring. Mix until just combined—do not overmix.
3️⃣ Gently fold in sprinkles (if desired) for a pop of color and fun!

Step 3: Cook the Pancakes
1️⃣ Heat a griddle or pan over medium-high heat and melt a small pat of butter.
2️⃣ Scoop ¼ cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, about 2 minutes.
3️⃣ Flip and cook another 1-2 minutes until golden and cooked through.

Step 4: Assemble and Serve
