Ingredients
1 ¾ cups unsalted butter, softened (3 ½ sticks)
3 ½ cups unbleached all-purpose flour (avoid bleached flour)
2 tsp vanilla extract
1 ½ cups granulated sugar
1 cup crushed potato chips (regular salted, not flavored)
Instructions
Preheat oven to 350°F (175°C).
In a large bowl, cream butter and sugar until light and fluffy.
Mix in vanilla extract.
Gradually add flour, mixing until just combined.
Fold in crushed potato chips gently.
Scoop dough onto a lined baking sheet (about 1 tbsp per cookie).
Bake 12–15 minutes or until edges are lightly golden.
