1 head butter lettuce, leaves separated
1/2 cup crushed pineapple (with juice)
2 tbsp soy sauce
1 tbsp honey or brown sugar
1 tbsp rice vinegar
1 tsp sesame oil
2 garlic cloves, minced
1 tsp fresh grated ginger
1/2 cup shredded carrots
2 scallions, sliced
Sesame seeds for garnish
Instructions
In a skillet, cook ground chicken until browned. Drain if needed.
Add garlic, ginger, pineapple, soy sauce, honey, vinegar, and sesame oil. Simmer until thick and saucy.
Spoon chicken into lettuce leaves.
Top with carrots, scallions, and sesame seeds.
