Ingredients
• 1 box yellow cake mix (15.25 oz)
• 1 cup crushed pineapple (drained)
• 1 cup shredded coconut
• ½ cup vegetable oil
• 3 large eggs
• 1 cup milk
For the Glaze:
• 1 cup powdered sugar
• 2 tbsp pineapple juice
• 2 tbsp unsalted butter (softened)
• 1 tsp vanilla extract
Instructions
Preheat oven to 350°F and grease a 9×13″ pan.
Mix cake mix, oil, eggs, and milk. Gently fold in pineapple and coconut.
Pour into the pan and bake 30–35 mins until a toothpick comes out clean. Cool completely.
Beat powdered sugar, juice, butter, and vanilla until smooth.
Spread glaze over cooled cake, chill or serve at room temp. Slice and enjoy!
