Ingredients
🧈 2 tbsp butter
🧅 1 small yellow onion, diced
🫑 1 small green bell pepper, diced
🍄 8 oz brown mushrooms, minced
🧂 ½ tsp kosher salt
🌿 ½ tsp black pepper
🍅 2 tbsp ketchup
🥄 2 tbsp Worcestershire sauce
🥚 2 large eggs
🥩 2 lbs lean ground beef (80/20 or 85/15)
🍞 1 cup panko breadcrumbs
🧀 8 oz Provolone cheese slices
Instructions
1️⃣ Preheat & Prep: Preheat oven to 375°F and grease a 9×5 loaf pan.
2️⃣ Sauté the Veggies: Melt butter in a skillet over medium heat. Add onions, peppers, mushrooms, salt, and pepper. Sauté for 2 minutes, stir, then let brown for another 2 minutes. Remove from heat and cool for 5 minutes.
3️⃣ Mix the Meatloaf: In a large bowl, whisk together ketchup, Worcestershire sauce, and eggs. Add ground beef, sautéed veggies, and panko breadcrumbs. Mix well with your hands.
4️⃣ Layer the Cheese: Press half of the meat mixture into the loaf pan. Place half of the Provolone slices in the center (about 2 inches wide). Top with the remaining meat mixture.
5️⃣ Bake & Melt: Bake for 40 minutes, then top with the remaining Provolone slices. Bake for another 15-20 minutes until the cheese is melted and bubbly.
6️⃣ Rest & Serve: Let the meatloaf rest for 10 minutes before slicing. Enjoy every cheesy, savory bite! 😋
