Ingredients

  • 1 (15 oz) can whole kernel corn, drained
  • 1 (15 oz) can cream-style corn
  • 1 (8 oz) package Jiffy corn muffin mix
  • 1 cup sour cream
  • ½ cup (1 stick) unsalted butter, melted
  • 1 cup shredded cheddar cheese (optional, for topping)

Instructions

1. Preheat & Prep

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch or 2-quart baking dish.

2. Mix Everything Together

  • In a large bowl, stir together both cans of corn, Jiffy mix, sour cream, and melted butter until well combined.

3. Assemble the Casserole

  • Pour the mixture into the greased baking dish and smooth the top.

4. Add Cheese (Optional but Delicious!)

  • Sprinkle shredded cheddar over the top for extra flavor.

5. Bake to Perfection

  • Bake for 45-55 minutes until the top is golden brown and the center is set.
  • If using cheese, add it in the last 10-15 minutes of baking for a crispy, melty topping.

6. Cool & Serve

  • Let the casserole cool for 5 minutes before serving warm.

Notes
