1½ lbs baby potatoes, halved
2 tbsp olive oil
¼ cup basil pesto (store-bought or homemade)
⅓ cup grated Parmesan cheese
Salt and pepper to taste
Optional: chopped parsley or basil for garnish
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Toss potatoes with olive oil, salt, and pepper. Spread in a single layer.
Roast for 25 minutes, flipping halfway.
Remove from oven, toss with pesto and Parmesan, then roast 5–10 minutes more until golden and crispy.
Garnish and serve warm.
