Ingredients

Salmon:

✅ 4 (6 oz) salmon fillets, cubed (skin on or off)
✅ 2 tbsp oil
✅ 2 tsp minced garlic
✅ 1 tbsp fresh grated ginger

Orange Sauce:

✅ ¾ cup fresh orange juice
✅ 2-3 tbsp honey (adjust to taste)
✅ 1 tbsp rice vinegar
✅ 3 tbsp low-sodium soy sauce or tamari
✅ 1-2 tbsp orange zest
✅ 1 tbsp cornstarch
✅ ½ tsp red pepper flakes

For Serving:

✅ 2 cups cooked white or brown rice
✅ 2 cups cooked broccoli

Instructions

1️⃣ Make the Marinade & Sauce:

  1. Whisk together orange juice, honey, rice vinegar, soy sauce, and orange zest in a bowl.
  2. Add salmon cubes and marinate for 15 minutes.

2️⃣ Cook the Salmon:

  1. Heat oil, garlic, and ginger in a pan over medium-low heat for 2 minutes.
  2. Use tongs to add salmon cubes, cooking 3-4 minutes per side until golden brown. (Save the sauce!).

3️⃣ Thicken the Sauce:

  1. Pour the remaining marinade into a small saucepan and bring to a low boil.
  2. Whisk cornstarch with 2 tbsp water, then stir into the sauce.
  3. Simmer until thickened, whisking occasionally.

4️⃣ Combine & Serve:

  1. Pour ¾ of the sauce over the salmon and let it simmer for a few minutes.
  2. Optional: Broil the salmon for 2-3 minutes for extra crispiness!
  3. Assemble bowls with rice, broccoli, and salmon, drizzling with the remaining sauce.

Notes

Swap sweeteners – Use maple syrup or coconut sugar instead of honey.
Extra crispy? Lightly broil the salmon for a few minutes at the end!
Make it low-carb – Swap rice for cauliflower rice or zucchini noodles.
