Ingredients
Joconde (Almond Sponge Cake):

Coffee Ganache:
🍫 8 oz (225g) dark chocolate, chopped
🥛 ½ cup (120ml) heavy cream
🍷 1 tbsp coffee liqueur (optional)
Coffee Buttercream:
🧈 1 cup (225g) unsalted butter, softened
🍚 2 cups (240g) powdered sugar
☕ ¼ cup (60ml) brewed coffee, cooled
Additional Components:
🍯 Coffee syrup or brewed coffee (to soak layers)
🍫 Chocolate glaze (for decoration)
Instructions
🔥 Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
🥣 In a large bowl, beat eggs with powdered sugar until pale and fluffy.
🌾 Gently mix in the almond flour and all-purpose flour.
🧈 Fold in the melted butter, ensuring the batter is smooth.
📜 Spread evenly on the baking sheet and bake for 8-10 minutes until lightly golden.
