Ingredients
✅ 1 tbsp oil
✅ 4 pork sausages (approx. 14oz / 400g)
✅ 1 brown onion, finely chopped
✅ 1 bell pepper (capsicum), finely chopped
✅ 2 cloves garlic, crushed
✅ 1 can (14oz / 400g) diced tomatoes
✅ 10½ oz (300g) penne pasta
✅ 4½ cups (1100ml) water
✅ 2 oz (60g) cream cheese
✅ Salt & black pepper (to taste)
Instructions
1️⃣ Squeeze the sausage meat out of the casings and brown in a large pot with oil over medium heat. Break it up with a spoon as it cooks. Once golden, remove and set aside.
2️⃣ In the same pot, cook the chopped onion for 5 minutes, scraping up any browned bits.
3️⃣ Add the bell pepper and garlic, cooking for another 2 minutes.
4️⃣ Pour in the diced tomatoes, pasta, water, and return the sausage to the pot. Stir well.
5️⃣ Bring to a boil, then reduce heat and simmer for 15-18 minutes, stirring occasionally, until the pasta is tender and the sauce thickens.
6️⃣ Remove from heat and stir in the cream cheese until smooth. Adjust seasoning with salt and pepper.
7️⃣ Serve immediately and enjoy this creamy, cozy pasta!
