Some meals just bring sunshine to your table, and these One-Pan Chicken & Pineapple Tacos do exactly that! Inspired by al Pastor flavors, this dish is a perfect balance of smoky, sweet, and tangy. The best part? Everything roasts on one tray, making it easy, mess-free, and full of flavor. Whether it’s a busy weeknight or a casual taco night, this recipe is a must-try!


Ingredients

For the Tacos:
✅ 4 boneless, skinless chicken thighs (bite-sized pieces)
✅ 200g fresh pineapple chunks
✅ 1 small shallot, finely chopped
✅ Juice of 1 lime + extra wedges for serving
✅ Small handful fresh coriander, roughly chopped
✅ 1 ripe avocado, cubed
✅ 8 small corn or flour tortillas

For the Marinade:
✅ 2 tbsp chipotle paste
✅ 2 tbsp runny honey
✅ 1 ½ tsp tomato purée
✅ 1 tsp salt
✅ 2 large garlic cloves, crushed


Instructions

1️⃣ Whisk together all marinade ingredients in a bowl. Add chopped chicken and toss to coat. Let it marinate while the oven preheats.
2️⃣ Preheat oven to 200°C (392°F).
3️⃣ Spread the marinated chicken on a baking tray and sprinkle with pineapple chunks. Roast for 30 minutes until chicken is cooked through.
4️⃣ While it bakes, chop the shallot and avocado. If using corn tortillas, lightly char them in a dry pan or over an open flame.
5️⃣ Remove chicken from the oven, squeeze lime juice over the top, and toss with the shallots.
6️⃣ Serve in tortillas, topped with fresh coriander, avocado, and extra lime wedges. Enjoy!
