Ingredients
🔹 1 ½ cups unsweetened shredded coconut
🔹 ¾ cup chocolate chips (Lily’s or your favorite brand)
🔹 24 Cadbury mini eggs, jelly beans, or macadamia nuts
Instructions
1️⃣ Toast the Coconut:
🔥 Preheat oven to 400°F (200°C).
🥥 Spread shredded coconut on a baking sheet and toast for 5-10 minutes, stirring occasionally, until golden brown.
⚠️ Keep a close eye on it—it can burn quickly!
2️⃣ Melt the Chocolate:
🍫 In a microwave-safe bowl, melt chocolate chips in 20-30 second increments, stirring in between, until smooth.
3️⃣ Make the Nests:
🥄 Mix the toasted coconut into the melted chocolate.
🥚 Use a spoon or scoop to drop 2-3 tablespoons of the mixture onto parchment paper, shaping them into nests.
🐣 Top each with 2-3 candy eggs.
4️⃣ Let Them Set:
❄ Let the nests set at room temperature, or place in the fridge/freezer for quicker setting.
5️⃣ Enjoy & Store:
📦 Store in an airtight container for 4-5 days at room temp or longer in the fridge. Let sit for 5-10 minutes before eating if chilled.
