Mocha Cookie Crumble Recipe

  • 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons instant coffee granules
  • 1 cup chocolate chips
  • 1/2 cup crushed chocolate cookies

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, beat butter and sugar until light and fluffy. Beat in the egg, vanilla extract, and instant coffee granules.
  4. Gradually add the flour mixture to the butter mixture, mixing until just combined. Fold in chocolate chips.
  5. Press half of the dough into a greased 8-inch square baking pan. Sprinkle with crushed chocolate cookies.
  6. Press the remaining dough over the cookie layer.
  7. Bake for 25-30 minutes, or until set. Allow to cool before cutting into bars.
