Mini Meatloaf Muffins

Ingredients

  • 1 lb ground beef

  • 1/2 cup Italian breadcrumbs

  • 1/2 cup grated Parmesan cheese

  • 1/3 cup milk

  • 1/4 cup ketchup

  • 1/4 cup finely chopped onion

  • 1/4 cup finely chopped bell pepper

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 large egg

Topping:

  • 1/4 cup ketchup

  • 2 tbsp brown sugar

  • 1 tsp mustard

  • 1/2 tsp Worcestershire sauce


Instructions

  • Preheat oven to 375°F and grease or line a muffin tin.

  • In a large bowl, combine all meatloaf ingredients. Mix well until fully combined.

  • Evenly divide the mixture into the 12 muffin cups, pressing down gently.

  • In a small bowl, mix the topping ingredients. Spoon a bit on top of each muffin.

  • Bake for 20–25 minutes, until cooked through (internal temp 160°F).

  • Let cool for a few minutes and serve warm.
