Mini Hand Pies with Apple Brie Filling

1 sheet puff pastry (or pie dough), thawed

1 small apple, peeled and diced

2 oz brie cheese, cut into small pieces

½ tsp fresh thyme (or a pinch of dried)

1 tsp butter

1 tsp maple syrup or honey (optional)

1 egg (for egg wash)


Instructions

Preheat oven to 375°F (190°C).

In a skillet, sauté diced apples with butter and thyme until just tender (about 5 mins). Add a touch of maple syrup if desired.

Cut pastry into 3–4 inch rounds or squares.

Add a spoonful of apple mixture and a piece of brie to each. Fold, crimp edges, and brush with egg wash.

Bake 15–18 minutes until golden and puffed. Cool slightly before serving.
