Ingredients
Crust
1 cup almond flour
2 tbsp melted butter or coconut oil
1 tbsp maple syrup or sweetener of choice
Pinch of salt
Filling
1 cup Greek yogurt (plain or vanilla)
1 scoop vanilla protein powder
1 egg
1 tsp vanilla extract
Optional: 1–2 tbsp sweetener (monk fruit, honey, etc.)
Toppings (choose your fave)
Fresh berries
Chopped nuts
Drizzle of honey or nut butter
Instructions
Preheat oven to 325°F (160°C). Line a muffin tin with silicone or paper liners.
Mix crust ingredients and press a spoonful into each cup. Bake for 5–7 minutes.
Blend all filling ingredients until smooth and pour over crusts.
Bake for 15–18 minutes until centers are just set. Cool, then refrigerate for at least 2 hours.
Add your favorite toppings before serving!
