  • 1 lb (450g) baby potatoes
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ cup (125g) sour cream
  • 2 tablespoons chopped fresh chives

Instructions

1️⃣ Preheat oven to 375°F (190°C).
2️⃣ In a bowl, drizzle the baby potatoes with olive oil and toss to coat.
3️⃣ Spread the potatoes on a baking sheet in a single layer and sprinkle with salt.
4️⃣ Roast for 30 minutes, flipping halfway through for even browning.
5️⃣ Once done, cool slightly and cut a small wedge out of each potato.
6️⃣ Fill each potato with sour cream and sprinkle with fresh chives.
