Ingredients
- 8 oz rotini pasta
- 2 cups corn kernels (fresh, frozen, or canned)
- ½ cup cotija cheese, crumbled
- ¼ cup red onion, finely diced
- ¼ cup fresh cilantro, chopped
- ½ cup mayonnaise
- ¼ cup sour cream (or Greek yogurt for a lighter version)
- 1 tbsp lime juice
- 1 tsp chili powder
- ½ tsp smoked paprika
- Salt & pepper, to taste
Instructions
1️⃣ Cook pasta according to package directions until al dente. Drain and let cool.
2️⃣ In a skillet over medium-high heat, char the corn for 5-7 minutes, stirring occasionally. Let cool.
3️⃣ In a large bowl, mix mayo, sour cream, lime juice, chili powder, smoked paprika, salt, and pepper.
4️⃣ Add the cooled pasta, corn, cotija cheese, red onion, and cilantro. Toss until well coated.
5️⃣ Taste, adjust seasoning, and serve immediately or chill for later.
