Ingredients
✔️ 8 oz boneless, skinless chicken thighs (or breast), chopped
✔️ 1 ½ cups eggplant, chopped 🍆
✔️ 2 medium tomatoes, chopped 🍅
✔️ 1 tsp tomato paste
✔️ 1 carrot, sliced 🥕
✔️ ½ cup broccoli florets, chopped 🥦
✔️ ½ cup olives, whole 🫒
✔️ 2 garlic cloves, minced 🧄
✔️ 2 scallions, chopped
✔️ 2 tbsp olive oil
✔️ ½ cup feta cheese, crumbled 🧀
✔️ 1 tsp dried basil (or a handful of fresh) 🌿
✔️ ½ tsp coriander
✔️ ½ tsp crushed red pepper (optional for heat) 🌶️
✔️ Salt & pepper to taste
Instructions
1️⃣ Cook the Chicken & Eggplant 🍗
- Heat 1 tbsp olive oil in a skillet over medium-high heat.
- Add chicken and eggplant. Sauté for 4-5 minutes until golden.
2️⃣ Add Tomatoes & Simmer 🍅
- Stir in chopped tomatoes and cover. Cook for 3 minutes.
- Mix in tomato paste and 1-2 tbsp water if needed.
3️⃣ Cook the Vegetables 🥦
- Reduce heat to medium. Add broccoli, carrots, scallions, basil, coriander, and crushed red pepper.
- Drizzle in another tbsp of olive oil and cook for 3-4 minutes, stirring as needed.
4️⃣ Final Touches 🧀
- Stir in feta cheese, olives, garlic, and fresh basil.
- Cook for 1 more minute until the feta slightly melts, then turn off the heat.
5️⃣ Serve & Enjoy! 🍽
- Season with salt & pepper, and enjoy as is or with bread & a fresh Mediterranean salad!
