1 lb ground turkey
1 egg
1/4 cup breadcrumbs
2 cloves garlic, minced
1/2 tsp dried oregano
Salt and pepper to taste
2 cups cooked brown rice or quinoa
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, thinly sliced
1/4 cup Kalamata olives, pitted and halved
1/4 cup crumbled feta cheese
Tzatziki sauce (store-bought or homemade)
Olive oil for cooking
Instructions
Prepare the meatballs: In a bowl, mix ground turkey, egg, breadcrumbs, garlic, oregano, salt, and pepper. Roll into small balls.
Cook the meatballs: Heat olive oil in a skillet over medium heat. Cook meatballs until browned and cooked through (about 10–12 minutes).
Build your bowl: Start with a base of rice or quinoa. Add fresh veggies, olives, and feta.
Top it off: Add warm meatballs and a generous spoon of tzatziki.
