Marinated Four Bean Salad

Ingredients

• ½ cup granulated sugar (adjust to taste)
• ⅓ cup apple cider vinegar
• 2 tbsp olive oil
• ½ tsp salt
• ½ tsp pepper
• 1 (14.5 oz) can red kidney beans
• 1 (14.5 oz) can garbanzo beans
• 1 (15 oz) can green beans
• 1 (15 oz) can wax beans (or more green beans if unavailable)
• ½ red onion, thinly sliced
• 1 (2 oz) jar diced pimentos (or red bell pepper)
• ½ cup fresh parsley, chopped


Instructions

Whisk sugar, vinegar, oil, salt, and pepper in a small bowl.

Drain and rinse all beans and pimentos.

In a large bowl, combine beans, onion, parsley, and dressing. Mix well.

Cover and refrigerate for at least 4 hours, stirring occasionally. Enjoy chilled!
