Mango Chickpea Salad

Ingredients

• 1 can chickpeas (15 oz), drained and rinsed
• 1 ripe mango, peeled and diced
• ½ red bell pepper, diced
• ¼ red onion, finely chopped
• ¼ cup fresh cilantro, chopped
• 1 small cucumber, diced (optional for crunch)
• Juice of 1 lime
• 1 tbsp olive oil
• Salt & pepper to taste
• ¼ tsp chili flakes or cayenne (optional, for a kick)


Instructions

In a large bowl, combine chickpeas, mango, bell pepper, onion, cucumber, and cilantro.

In a small bowl, whisk together lime juice, olive oil, salt, pepper, and chili flakes.

Pour the dressing over the salad and toss gently.

Chill for 10 minutes or serve immediately for peak freshness!
